Spicy Cajun Chicken & Rice Yum

Ingredients

  • 2 lbs boneless skinless chicken breasts, sliced in half and pounded to even thickness
  • 2 cup rice (uncooked)
  • 36oz chicken broth
  • 3 whole bell pepper, sliced
  • 1 package of mushrooms, sliced
  • 2 red onions, diced
  • 1 bunch cilantro, chopped
  • 5 teaspoons cajun seasoning, divided
  • Cajun seasoning
  • 2 teaspoon salt
  • 2 teaspoon garlic powder
  • 3 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon red pepper flakes

Directions

  1. * Season chicken breasts on both sides with Cajun seasoning.
  2. * Using a large pan/skillet/pot (large enough for all ingredients) brown chicken in oil over medium-high heat for about 1 minute and transfer to a plate.
  3. * Saute the onions in oil until translucent.
  4. * Add the mushrooms until they shrink down.
  5. * Reduce heat to medium-low and add rice, peppers, chicken broth, and remaining Cajun seasoning and stir to combine.
  6. * Place chicken on top of the rice, cover, and simmer for 20 minutes until liquid is absorbed and chicken is cooked through.
  7. * Sprinkle with cilantro and serve.
