Meatloaf - Stuffed with Goat Cheese Yum

Ingredients

  • 2 lb ground beef - 80%
  • 3 eggs
  • 6 scallions
  • 1 yellow onion
  • 6 cloves garlic
  • 4 oz mushrooms
  • 1 tsp cayenne pepper
  • 1 tbsp oregano
  • 1 tbsp course salt
  • 1 tbsp pepper
  • 8oz goat cheese
  • 4 oz raw spinach
  • 12 oz tomato paste
  • 4 tsp fresh rosemary

Directions

  1. Preheat oven to 425 degrees F.
  2. Add meat, eggs into mixing bowl. Add finely chopped scallions, garlic and onions. Mix it up together.
  3. Add cayenne, oregano, salt, pepper and mix up again.
  4. Laydown two things of 9 inch length of plastic wrap overlapping to form a square. Try to flatten out the meat and create a square and then add the spinach, goat cheese, rosemarry to the middle.
  5. Folder over depth wise and put into the 9x13 pan
  6. Top with tomato paste and chopped rosemary
